  • 1 tbsp olive oil, plus some for the can
  • Flour for dusting
  • 320g pack of ready-rolled shortcrust pastry
  • 1 white onion, finely chopped
  • large bunch of spring onions, finely chopped
  • 4 eggs, plus 1 egg yolk
  • 250 ml whole milk
  • small bunch of chives, finely chopped
  • 150 g mature cheddar, grated
  • green salad (optional)

Preparation steps

  1. Lightly grease a 9-inch, loose-bottomed fluted cake pan with a pastry brush.
  2. Lightly dust a clean work surface with flour and turn the dough out onto it.
  3. Roll out the dough into a circle larger than the flan pan.
  4. Carefully place the dough into the pan, gently pressing it into the bottom and sides.
  5. Leave an overhang over the edge of the mold. Chill in the refrigerator for 30 minutes.
  6. Meanwhile, heat the oil in a skillet over low-medium heat.
  7. Stir in the onion with a large pinch of salt and fry gently for 15 minutes until softened.
  8. Add the spring onions and cook for a few minutes until slightly softened.
  9. Transfer to a plate and let cool slightly.
  10. Preheat the oven to 200°C/180°C fan/gas 6.
  11. Crumple up a sheet of baking paper and place it over the edges of the pan.
  12. Fill the tin with baking beans up to the edge.
  13. Bake for 15-20 minutes.
  14. Remove the beans and parchment and bake for another 5-10 minutes, until lightly golden and sandy to the touch.
  15. When the dough has risen, gently press it down with a cold metal spoon.
  16. Once the dough has cooled slightly, trim the edges of the dough.
  17. While the dough is baking, stir together the eggs, yolks, milk and chives in a jug.
  18. Season well with salt and black pepper.
  19. Reduce the oven temperature to 180°C/160°C fan/gas 4.
  20. Place the flan pan on a baking sheet and spread the onions evenly over the bottom.
  21. Sprinkle most of the grated cheddar on top and pour over the egg mixture.
  22. Top with remaining cheese and bake for 25-30 minutes, until firm and lightly golden brown. The center should wobble slightly.
  23. Remove and allow to cool for 10-15 minutes before slicing.
  24. Serve warm, with a crisp green salad if desired.
