Cheese and Marmite pies

  • 500g potatoes, peeled and grated
  • 200 g mature cheddar (or vegetarian alternative), grated
  • 100g soft breadcrumbs
  • Bunch of spring onions, thinly sliced
  • 2 eggs
  • 500g pack of shortcrust pastry
  • some flour for dusting
  • 2 tbsp Marmite (or Vegemite)

Preparation steps

  1. Place the grated potatoes, cheese, breadcrumbs and spring onions in a mixing bowl with 1 egg.
  2. Sprinkle 1 teaspoon salt and plenty of freshly ground black pepper on top.
  3. Mix together.
  4. Roll out the dough on a lightly floured surface until it is slightly thicker than a £1 coin.
  5. Using a 16-17cm saucer or bowl, cut out six circles of dough. You may need to roll up the scraps again to get the final circle.
  6. Heat the Marmite in a small pan or in the microwave with a splash of water to make it a little runnier, then spread over each circle, leaving a 2-3cm border around each edge.
  7. Spread the filling in the center of each circle.
  8. Whisk the remaining egg and brush a little on each edge.
  9. Bring the two sides of the dough up to meet above the filling and press together to seal into a pasty shape.
  10. If eating straight away, place the pies on a baking tray and cool while you preheat the oven to 160°C/140°C fan/gas 3.
  11. Or leave on the tray, wrap tightly in plastic wrap and freeze for up to 3 months.
  12. Brush the pies all over with more egg.
  13. Bake for 50 minutes to 1 hour, until golden brown and crispy.
  14. Eat warm or cool for the next 24 hours.
