Ingredients

  • 350g self-raising flour, plus some flour for dusting
  • 1 tsp baking soda
  • 85g butter, diced, plus some butter for serving
  • 200g extra mature cheddar, grated
  • 284 ml buttermilk
  • 6 heaping teaspoons of onion chutney, plus extra for serving

Preparation steps

  1. Preheat the oven to 220°C/200°C fan/gas 7.
  2. Dust a large baking tray with a little flour.
  3. Place the flour in a large bowl and mix in the bicarb and 1 teaspoon salt.
  4. Add the butter and rub the flour into breadcrumbs with your fingertips or puree in a food processor until no lumps of butter remain.
  5. Stir in all but a small handful of cheese.
  6. Drizzle the buttermilk over the top and mix quickly and lightly with a cutlery knife.
  7. Transfer the mixture to a lightly floured surface and gently shape it with your hands into an oval about 1 inch deep.
  8. Using a floured knife, cut the dough into 6 scones.
  9. Lift the scones onto the baking sheet, leaving room for them to spread.
  10. Use the back of your teaspoon measure to make a small well in the center of each scone.
  11. Add the chutney to the dips.
  12. Sprinkle the remaining cheese over the scones.
  13. Bake for 10-15 minutes until the scones have risen and are golden brown.
  14. Best eaten on the day of baking with butter, plus a pinch of chutney if you feel like it.
