Ingredients

  • 350g self-raising flour
  • 1 teaspoon Baking powder
  • 2 tsp English mustard powder
  • ¼ teaspoon ground cayenne pepper or paprika, plus extra for sprinkling
  • a few thyme sprigs, leaves picked off
  • 50g cold, unsalted butter, cut into cubes
  • 175g Cheddar cheese, grated
  • 175 ml semi-skimmed milk, plus a little milk for brushing
  • Juice ½ lemon

Preparation steps

  1. Bring a pot of salted water to the boil.
  2. Hold an ear of corn at a right angle to the cutting board, then run a sharp knife down the length of the ear, as close to the kernel as possible, cutting off the rows of corn.
  3. Cook the kernels for 4 minutes or until just tender, then drain well.
  4. Preheat oven to 220°C/200°C fan/gas 7.
  5. Mix the flour, baking powder, mustard, cayenne pepper, 1 teaspoon salt, and 1 teaspoon thyme leaves in a large bowl, then rub in the butter until the mixture resembles fine crumbs.
  6. Add most of the cheese and all of the corn.
  7. Mix the milk with the lemon juice and stir into the bowl until a slightly sticky dough forms. Do not overwork the dough.
  8. Place the dough on a floured work surface, knead 2-3 times to make it a little smoother, then divide into 10 balls.
  9. Roughly shape each one with your hands and place on a floured baking sheet.
  10. Brush each one with a little milk and then sprinkle with some cheese, cayenne pepper and a few thyme leaves.
  11. Bake for 10-12 minutes or until the scones have risen, are golden brown and sound hollow when tapped on the bottom.
  12. Let cool on a rack.
