- 150ml/¼ pint whole milk
- 900 g mashed potatoes, e.g. B. King Edward or Maris Piper
- 85-100g butter

- Cook whole potatoes in their skins for 30-40 minutes or until tender (time depends on size). Drain and peel off the shells. Return the potatoes to the pan, cover, and heat gently for a minute or two.
- Remove from the heat and mash the potatoes with the butter until there are no lumps left. Heat the milk and spring onions again, then gradually beat them into the potatoes and mix well with a wooden spoon so that the potatoes become fluffy. Season well.
