Ingredients

  • 2kg fresh broad beans in the pod or 550g/1lb 4oz frozen
  • 3 tbsp olive oil
  • 1 carrot, 1 onion and 1 celery stick, all roughly chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon golden powdered sugar, plus a pinch
  • 1 tsp tomato paste
  • 4 tbsp white wine vinegar
  • 150 ml dry white wine
  • Sprig of fresh thyme or rosemary
  • 1 leg of lamb weighing 3 kg
  • 50g butter
  • 1 tbsp chopped fresh mint
  • buttered new potatoes for serving
  • 250 ml lamb or chicken stock

Preparation steps

  1. Peel the beans the day before.
  2. Bring a large pot of water to a boil and prepare a bowl of ice water.
  3. Add the beans to the water, let them boil again (2-3 minutes), drain and plunge them into the ice water to cool (about 2 minutes).
  4. Drain them, then squeeze each one between your thumb and forefinger to skin them.
  5. Store covered in the refrigerator.
  6. Make the sauce.
  7. Heat 2 tablespoons of olive oil in a pan, add carrot, onion, celery and garlic and fry for 10-15 minutes.
  8. Stir in the sugar and tomato puree and let it brown, then add 4 tablespoons of vinegar and let it boil down to a syrupy glaze.
  9. Add the wine and scrape out all the juice, then add the thyme or rosemary and stock and simmer for 10-15 minutes.
  10. Strain, cool, cover and refrigerate.
  11. An hour and a half before serving, preheat the oven to 240°C/gas 9/fan 220°C.
  12. Rub the lamb very well with salt, pepper and the remaining olive oil, then place it on a rack in a heavy roasting pan and roast very rarely for 45 minutes.
  13. Test by inserting a skewer into the center of the meat – the tip should come out cool, but not cold.
  14. Let the meat rest in the oven with the door slightly open and the temperature reduced to 110°C/Gas 1?4/Fan 90°C.
  15. After 15 minutes the meat should have an even pinkish-red color.
  16. Melt the butter in a saucepan, add a pinch of sugar, the mint, a good pinch of salt and 1 teaspoon of wine vinegar.
  17. Sauté for a minute, then add the beans and 2-3 tablespoons of water and sauté for another 2-3 minutes.
  18. Reheat the sauce in a saucepan and add the meat juice.
  19. To serve, cut the lamb into thick slices.
  20. Place 2-3 slices with the beans and sauce on each plate.
  21. Serve with buttered new potatoes.
