Cauliflower sausage casserole

  • 680g cauliflower florets
  • 180g chopped kale
  • 1 tbsp olive oil
  • 400g sausages, meat squeezed out

Preparation steps

  1. Bring a large pot of salted water to a boil and cook the cauliflower for 6 minutes. Add the kale for the last minute. Drain well.
  2. In the meantime, heat the oil in a non-stick frying pan, add the sausage meat and break it up with a wooden spoon. Fry all over for 4-5 minutes.
  3. Preheat the oven to 200°C/180°C fan/gas mark 6 and place the cauliflower and kale in a large baking dish.
  4. Pour over the cheese sauce, season and mix well.
  5. Scatter the sausage meat and cheddar cheese on top.
  6. Bake for 30 minutes until the top is golden brown and bubbling.
  7. Serve with mixed leaves if desired.
