  • 2 thick cloves of garlic, minced
  • 1 small pack of sage, half of the leaves picked off, the largest left whole, the rest finely chopped
  • 180g pack of cooked chestnuts, 2/3 roughly chopped, the rest halved
  • 100 g flour “00”.
  • 100g polenta
  • 2 ½ tsp baking powder
  • 150g Parmesan (or vegetarian alternative), grated
  • 8 large eggs, beaten
  • green salad for serving (optional)

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Bring a large pot of salted water to the boil.
  3. Add the cauliflower florets and cook for 10 minutes, until soft but holding their shape.
  4. Drain and allow to steam dry.
  5. Meanwhile, heat oil and butter in a skillet over medium-high heat.
  6. Add the onion and a pinch of salt, then cook until soft and caramelizing, 8 minutes.
  7. Add the garlic, chopped sage leaves and chopped chestnuts and cook until fragrant, 2 minutes.
  8. Remove the pan from the heat and let it cool slightly.
  9. Grease the bottom of a 23 cm springform pan and line it with baking paper.
  10. Place flour, polenta, baking powder and cheese in a large bowl.
  11. Stir in the eggs to form a smooth dough.
  12. Gently fold in the cooked onion mixture and cauliflower.
  13. Pour the mixture into the prepared pan.
  14. Scatter the remaining sage leaves and chestnuts on top.
  15. Bake for 40 minutes until golden brown.
  16. Serve warm as a main course, with a large green salad if desired.
