Ingredients

  • 1 small cauliflower (600 g), cleaned and finely chopped

  • 1 red chili pepper, deseeded and chopped
  • 75g Parmesan (or vegetarian alternative), grated
  • 1 lemon, grated zest (reserve juice for sauce)
  • 150g fresh brown breadcrumbs, toasted
  • 4 tbsp flour
  • 1 egg, beaten
  • Olive oil spray, for baking
  • Arugula salad for serving
  • 1 anchovy, rinsed and finely chopped
  • 3 tbsp low-fat mayonnaise
  • 200g Greek yogurt
  • ½ small packet of flat-leaf parsley
  • 2 tsp Worcestershire sauce
  • Lemon juice (from above)

Vegetarian friendly

To make the dipping sauce vegetarian, swap the anchovy for a crushed garlic clove and choose a vegetarian Worcestershire sauce.

Preparation steps

  1. Preheat oven to 220°C/200°C fan/gas 7.
  2. Cook the cauliflower in salted water for 5 minutes until tender.
  3. Drain, return to pan to evaporate excess water, then transfer to a bowl to cool.
  4. Add garlic, spring onions, chilli, parmesan, lemon zest, 50g toasted breadcrumbs, flour, egg and some spices to the cooled cauliflower.
  5. Form 16 cakes from the mixture.
  6. Roll the cakes in the remaining breadcrumbs.
  7. Place the cakes on a plate and let them chill for at least 1 hour or overnight before baking.
  8. To make the sauce, place all ingredients in a food processor or blender.
  9. Add some spices and stir until smooth.
  10. Pour the sauce into a serving bowl and set aside.
  11. Spray a large baking sheet generously with oil.
  12. Place the cauliflower cakes on the baking sheet and spray well again.
  13. Bake for 25 minutes until golden brown and crispy.
  14. Serve the cauliflower cakes with the sauce and some rocket salad.
