Ingredients

  • 120g plain flour
  • 3 large eggs
  • 275 ml semi-skimmed milk
  • 12 linked chipolatas or 1 large rolled up Cumberland sausage
  • 2 tbsp sunflower oil
  • 4 sprigs rosemary or thyme, picked into smaller sprigs
  • Puree and vegetables for serving (optional)
  • 1 tbsp sunflower oil
  • 2 large red onions, halved and thinly sliced
  • 2 tbsp flour
  • 2 tsp English mustard powder
  • 1 cube of chicken broth
  • 2 tbsp honey
  • 2 tbsp whole grain mustard

Preparation steps

  1. Mix the flour, eggs and milk in a jug with 1/2 teaspoon salt and then let it rest for at least 30 minutes.
  2. Preheat oven to 220°C/200°C fan/gas 7.
  3. Loosen the connections between each sausage and keep them connected. Pinch the meat to fill the gaps, creating a long sausage.
  4. Loosely wrap the sausage and place it in a large skillet or ovenproof skillet (ours was 10 inches wide).
  5. Pour the oil over and brown in the oven for 12-15 minutes.
  6. Remove the pan from the oven and carefully lift out the sausage.
  7. Pour the batter into the pan, then place the sausage back on top, sprinkle with the herbs and place in the oven for 25-30 minutes without opening the door – otherwise the Yorkshire pudding will sink.
  8. Meanwhile, heat the oil in a frying pan and fry the onions for 10 minutes or until they begin to caramelise.
  9. Stir in the flour and mustard powder and crumble in the stock cube.
  10. Gradually stir in 500 ml water until a smooth sauce forms, then add honey and mustard and season.
  11. Allow to bubble for 5 minutes, then serve with the toad in the hole and mash and add vegetables as desired.
