Cardamom lamb stew

Ingredients

  • 2 large onions, roughly chopped
  • 6 cloves of garlic
  • 50g ginger root, roughly chopped
  • 3 tbsp sunflower oil
  • 30 cardamom pods, deseeded and ground
  • 2 tsp ground coriander
  • 1 kg lean, diced lamb
  • 700 ml lamb broth
  • 2 fresh red chili peppers, deseeded and chopped
  • 3 tbsp tomato paste
  • 100 g coconut cream (from a block), chopped
  • 20 fresh curry leaves
  • 2 eggplants, diced
  • 400g bag of spinach
  • 1½ kg large new potatoes
  • 2 tbsp sunflower oil
  • 3 tbsp tamarind paste
  • ½ tsp turmeric
  • 1 tsp cumin seeds
  • 10 fresh curry leaves

Preparation steps

  1. Place onion, garlic and ginger in a food processor and puree until pureed.
  2. Heat the oil in a large skillet and fry the onion puree, stirring frequently, until it begins to color, 20 minutes.
  3. Add cardamom and coriander and fry for a few more minutes.
  4. Add the lamb and sauté until it begins to brown.
  5. Pour in the broth and then add chili, tomato paste, coconut and curry leaves.
  6. Cover and simmer for 1 hour.
  7. Add the eggplant and cook for another 30 minutes, until the lamb and eggplant are tender.
  8. Cook the potatoes whole in their skins for 15-20 minutes until just tender, then drain and allow to cool.
  9. In a hot pan, wilt the spinach, then cool and squeeze with your hands to remove as much water as possible.
  10. Peel the potatoes and cut them into thick slices.
  11. Toss the potato slices with oil, tamarind, turmeric, cumin, curry leaves and spices.
  12. Stir the spinach into the curry and place in an ovenproof dish.
  13. Pile the potato mixture on top and press down lightly.
  14. If you want to eat it straight away, preheat the oven to 160°C/180°C fan/gas mark 4 and bake for 50 minutes to 1 hour.
  15. Serve with chutney and raita or an Indian salad of chopped red onions, coriander, tomatoes, cucumbers and lemon juice.
