Ingredients

  • 300g carrots, peeled and halved or quartered lengthways
  • 1 tsp caraway
  • 2 tsp olive oil
  • 1 orange, peeled
  • 2 tsp red wine vinegar
  • 1 tbsp mixed seeds, e.g. E.g. pumpkin seeds, sunflower seeds and linseeds
  • 2 large handfuls of spinach leaves
  • 50g feta cheese

  8. Squeeze the remaining juice from the orange.
  9. Add the remaining oil, vinegar, seeds and spices to the bowl.
  10. Stir the ingredients in the bowl.
  11. Toss the roasted carrots and spinach with the dressing in the bowl.
  12. Divide the mixture between two plates.
  13. Sprinkle the feta cheese over the salad.
