Ingredients

  • 250g softened butter, plus some butter for greasing
  • 280g self-raising flour
  • 250g golden powdered sugar
  • ½ tsp baking powder
  • 4 eggs
  • 150 ml cup of natural yogurt
  • 1 tsp vanilla paste or extract
  • 1 tbsp cocoa powder, plus some for dusting
  • 100 ml strong coffee (we prepared it with 2 tbsp coffee granules)
  • 140g powdered sugar, sifted
  • 350g mascarpone or soft cheese
  • a few chocolate-covered coffee beans

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.

  2. Grease a 20 x 30 cm baking or roasting tin and line it with baking paper.

  3. To make the sponge cake, beat the butter, flour, sugar, baking powder, eggs, yogurt, vanilla, cocoa and half the coffee in a large bowl with an electric whisk until there are no lumps.

  4. Pour the dough into the mold.

  5. Bake for 25-30 minutes, until golden brown and risen and a skewer inserted comes out clean.

  6. Drizzle some of the remaining coffee over the cake.

  7. Let the cake cool in the tin.

  8. Stir the powdered sugar into the mascarpone.

  9. Spread the mascarpone icing over the cooled cake.

  10. Dust the cake with a little cocoa.

  11. Sprinkle the coffee beans over the cake.
