Ingredients

  • 450g dried mixed fruits
  • 100g raisins
  • 100 g glazed cherries
  • grated peel of 1 lemon
  • grated peel of 1 orange
  • 150ml medium sherry
  • 175g soft brown sugar
  • 100g plain flour
  • 50g self-raising flour
  • 50g ground almonds
  • 1 tsp spice mix
  • 175g butter, softened
  • 3 eggs

Preparation steps

  1. Place the fruits and peels in a bowl, pour over the sherry and leave to marinate overnight.
  2. Grease the bottom and sides of a 20cm deep cake tin and line with a double layer of baking paper.
  3. Preheat the oven to 140°C/fan 120°C/gas 1.
  4. Mix all dry ingredients together with the butter and eggs in a large bowl.
  5. If the mixture starts to curdle, you can add a little more flour.
  6. Stir in the fruit and discard any unabsorbed sherry.
  7. Pour the mixture into the mold.
  8. Smooth the surface and make a small dent in the center.
  9. Bake in the center of the oven for 2½ hours until the cake is a dark golden brown color.
  10. A skewer inserted should come out clean.
  11. If the top of the cake browns too quickly, cover it with a layer of baking paper.
  12. Leave it in the tin for about 10 minutes before turning it out onto a wire rack.
  13. Let it cool down.
  14. Serve plain or with the glaze or decoration of your choice.
