  • 2 skinless chicken breasts, halved lengthwise
  • 2 tsp olive oil
  • Juice 1 lemon
  • 4 rolls, halved
  • 3 tbsp crème fraîche
  • 2 hard-boiled eggs, sliced
  • 1 Little Gem lettuce, chopped
  • Cup of salad cress, sliced
  • 25g Parmesan, grated
