Cabbage and red rice salad with tahini dressing

This Middle Eastern-inspired vegetarian side dish is a flavorful combination of cabbage and red rice, creating a dish with contrasting textures that are truly delicious.   • 200g Camargue red rice (we used Waitrose red Camargue and wild rice) or regular long grain brown rice
  • 350g firm, round cabbage, chopped
  • Bunch of spring onions, thinly sliced
  • Zest and squeeze 1 large lemon
  • 3 tablespoons extra virgin olive oil, plus some extra for serving (optional)
  • 1 tsp clear honey
  • 1 tbsp tahini paste
  • 100 g Greek-style natural yogurt
  • 1 garlic clove, crushed
  • 50 g dried cranberries or currants
  • 2 tablespoons pine nuts or a handful of walnut pieces
  • ½ x 20g pack of dill or parsley, roughly chopped

Preparation steps

  1. Cook the rice according to the package instructions.
  2. Meanwhile, place the cabbage and scallions in a large bowl.
  3. Add the lemon zest, half the lemon juice, 1 tablespoon of oil and a good pinch of spices to the bowl.
  4. Massage the ingredients into the cabbage and set aside.
  5. Mix the remaining lemon juice and oil.
  6. Add honey, tahini, yogurt and garlic to the mixture.
  7. Dissolve the dressing with 2 tablespoons of water and season to taste.
  8. When the rice is soft, drain it in a colander and rinse briefly under cold water.
  9. Drain the rice well.
  10. Add the still warm rice to the cabbage mixture.
  11. Add most of the cranberries, nuts and herbs to the bowl.
  12. Add most of the tahini dressing and mix well.
  13. Arrange the salad on a serving plate.
  14. Sprinkle with the remaining cranberries, nuts and herbs.
  15. Drizzle with the last spoonfuls of dressing.
  16. If desired, add a dash of oil.
