  • 50g butter
  • 1 tbsp olive oil
  • 10 shallots, finely chopped (see tip below)
  • 6 cloves
  • 3 sprigs of thyme
  • 1 bay leaf, plus extra for serving
  • 600 ml whole milk
  • Pinch of white pepper
  • 100g fresh white breadcrumbs from a good loaf
  • 5 tablespoons cream or cream, more for serving if desired
  • ¼ tsp freshly grated nutmeg or to taste

Can be made 3 days ahead and refrigerated. To reheat, heat in a pot on the stove or in the microwave on medium for 3 minutes. You may want to add a splash of milk or cream to loosen the dough a bit.Peel shallots
To make the shallots easier to peel, soak them in freshly boiled water for 5 minutes. Cut them in half and then peel off the skin.

Preparation steps

  1. Heat butter and oil in a pan
  2. Add shallots, cloves, thyme and bay leaves
  3. Cook very, very gently for 15 minutes, until soft, translucent and light golden
  4. Remove cloves
  5. Add milk and pepper
  6. Simmer gently for 10 minutes
  7. Stir in breadcrumbs
  8. Bake for another 5 minutes over very low heat until the bread is nice and plump
  9. Stir in cream and nutmeg
  10. Fish out the stems from the thyme
  11. Season to taste
  12. Grate a little more nutmeg over it to serve
  13. Drizzle with a little more cream
  14. Decorate with a bay leaf
