Ingredients

  • 1 butternut squash (approx. 600 g), peeled and cut into 2 cm cubes
  • 2 tbsp olive oil
  • 320g ready-rolled puff pastry
  • 250g can of ricotta
  • a few sage leaves, finely chopped
  • good grated nutmeg
  • Zest and juice of half a lemon
  • 70g bag of arugula
  • 1 red chili pepper, deseeded and finely chopped
  • 25g pine nuts

Preparation steps

  1. Preheat oven to 220°C/200°C fan/gas 7.
  2. Place the pumpkin on a baking sheet.
  3. Toss the pumpkin in half the oil.
  4. Season the pumpkin with salt and pepper.
  5. Spread the squash in a single layer on the baking sheet (you may need 2 sheets).
  6. Roast the pumpkin for 30-35 minutes until tender.
  7. Meanwhile, place a large rectangle of baking paper on a baking tray.
  8. Roll out the dough and place it on the parchment.
  9. Use the tip of a knife to score a 1 cm wide border around the dough.
  10. Prick the inside of the dough all over with a fork.
  11. Bake the dough in the oven for 15 minutes.
  12. Mix the ricotta, sage, nutmeg, lemon zest and plenty of spices in a bowl.
  13. Once the dough and pumpkin are cooked, remove them from the oven.
  14. Gently press down the center of the pastry shell with the back of a spoon.
  15. Spread the ricotta mixture in the center of the dough.
  16. Place the roasted squash on top of the ricotta mixture.
  17. Bake the tart for a further 10-15 minutes until the pastry is golden brown and crispy.
  18. Mix lemon juice, rocket, chili, pine nuts and 1 tablespoon oil.
  19. Scatter half of the rocket salad over the tart.
  20. Serve the remaining rocket salad on the side.
