Ingredients

  • 4 thin slices smoked bacon
  • 140g Brie
  • 1 firm ripe pear
  • 2 thick slices of bread, preferably from an uncut granary or malted wheat bread
  • small handful of pecans (about 10)
  • To serve, a handful of arugula or watercress if you have it in the fridge

Preparation steps

  1. Set the grill to the highest setting and place a piece of foil under the grill grate to catch the cooking juices and save on washing up later.
  2. Place the bacon on the grill and grill for 2 minutes.
  3. While the bacon is grilling, cut the cheese into about 8 long slices.
  4. Core the pear and cut into slices.
  5. Place the bread slices under the broiler for just under a minute, until the bread is evenly toasted on one side only.
  6. Keep an eye on the bread to prevent charring.
  7. Turn the bread over and first cover the untoasted sides with a layer of pear slices.
  8. Place the grilled bacon on the pear slices.
  9. Place the remaining pear slices on top of the bacon.
  10. Place the brie on top of the pear and bacon.
  11. Scatter the pecans over the top, breaking them roughly with your fingers.
  12. Grill until cheese is melted and oozing, about another minute.
  13. Remove and eat immediately with arugula or watercress as a side dish.
