  • 500g pack of bread mix
  • 2 tsp mustard powder
  • 500g bag of new potatoes
  • 500 ml can of crème fraîche
  • 175g extra-mature cheddar, grated, plus extra for sprinkling
  • small bunch of parsley, chopped
  • some flour for dusting
  • 1 bunch of spring onions, sliced
  • 400g thick-cut lean ham, diced, any fat removed
  • 1 tbsp olive oil for greasing
  • 1 egg, beaten

Preparation steps

  1. Place the bread mixture in a large bowl, stir in the mustard powder, then prepare the mixture according to the package instructions.
  2. Cover with oiled plastic wrap and let rise in a warm place until doubled in size, 45 minutes to 1 hour.
  3. Meanwhile, bring a large pot of salted water to the boil, add the potatoes and cook until tender, 10-12 minutes.
  4. Drain, let cool in a sieve, then peel off the skin and cut into rough cubes.
  5. Mix the crème fraîche, cheddar and parsley and then season generously.
  6. Roll out a little less than half of the dough on a floured work surface into a 25cm circle – it’s easier to use a rolling pin and stretch it with your hands at the same time.
  7. Transfer to a floured baking sheet that will fit in the freezer.
  8. Place the potatoes evenly on top, leaving a border of a good 2-3 cm free.
  9. Spread half of the crème fraîche mixture on top.
  10. Then add the spring onions, then the ham and spread the remaining crème fraîche mixture over it.
  11. Roll out the remaining dough as you did the first time, slightly larger than 25 cm.
  12. Brush the bottom of the cake with water and then lift the top onto the cake.
  13. Trim if necessary, then press and roll the edge to seal.
  14. Do this all the way around and then press down with the tines of a fork to make a really good seal.
  15. The cake is now ready to freeze, put a little oil on some cling film and wrap it well.
  16. Freeze for up to 2 months or, if baking straight away, bake the stuffed bread at 180C/160C Fan/Gas 4 for 1 hour until golden brown.
  17. Take the cake out of the freezer in the morning and let it stand at room temperature for about 3 hours.
  18. Preheat the oven to 160°C/140°C fan/gas 3.
  19. Brush the frozen cake with beaten egg, sprinkle with a little more cheese if desired and cover with foil.
  20. Bake for 1 hour, then remove the foil and bake for another hour, until the pastry is golden brown and crispy – insert a skewer into the center and check that it is hot all the way through.
