Bread and walnut sauce

  • 1l whole milk
  • 1 small onion, finely chopped
  • 50g butter
  • generously grated nutmeg
  • 3 bay leaves
  • 2 garlic cloves, sliced
  • 8 slices white bread, crust removed
  • 50g walnuts

Store in the refrigerator or freeze for up to 1 month.
To reheat, let the frozen sauce thaw thoroughly, then reheat over a low heat, adding a splash of milk or cream to loosen the sauce if it is too thick.

Preparation steps

  1. Pour the milk into a saucepan, add the onion, butter, nutmeg, bay leaf and garlic and bring to the boil.
  2. Turn the heat to the lowest setting and let the milk steep for 30 minutes. If you have time, make this the day before, let it cool completely, then refrigerate overnight.
  3. To make the sauce, bring the milk back to the boil and break the bread into large pieces.
  4. Fish out the bay leaves, then add the bread and most of the walnuts to the sauce.
  5. Puree everything in a food processor or with a hand blender and then season to taste.
  6. Serve the sauce hot with the remaining walnuts, one of the bay leaves and a little butter melted over it if desired.
