Bread and butter pudding

  • 250 ml whole milk
  • 300 ml cream
  • 1 vanilla bean, halved and the pulp scraped out, or 1 teaspoon vanilla extract
  • 3 whole large eggs, plus 1 egg yolk
  • 3 tbsp golden powdered sugar
  • 8 slices of crusty white bread from the day before
  • 50g lightly salted butter, softened and a little butter for greasing
  • Mix 75 g of sultanas and currants or other dried fruits
  • Zest of half a lemon
  • 2 tbsp demerara sugar


Make it moist

To make your pudding moist, soak the dried fruit in 2 tablespoons of brandy, whiskey or rum.

Preparation steps

  1. Preheat the oven to 180C/160C/Gas 4.
  2. In a saucepan, heat milk, cream and vanilla pod (with pulp) until just below boiling point.
  3. In a separate jug, whisk together the eggs, egg yolks and powdered sugar.
  4. Slowly pour the warm milk mixture into the jug along with the vanilla bean, stirring constantly until smooth.
  5. Stir in vanilla extract if desired.
  6. Lightly butter an ovenproof dish (approx. 20 cm x 25 cm x 5 cm).
  7. Cut the crust off the bread slices.
  8. Butter both sides of the bread and cut into triangles.
  9. Arrange half of the bread slices on the bottom of the pan, slightly overlapping.
  10. Mix dried fruit with lemon zest and sprinkle half of the mixture over the bread.
  11. Layer the remaining bread on top and sprinkle with the remaining fruit.
  12. Remove the vanilla bean from the custard and pour the custard over the pudding.
  13. Allow the pudding to soak for at least 30 minutes, or longer in the refrigerator if necessary.
  14. Sprinkle Demerara sugar over the pudding.
  15. Bake for 35-40 minutes until the dough is golden brown and risen.
