Ingredients

  • 100 ml sunflower oil, plus some for greasing
  • 140g powdered sugar
  • 140g plain flour
  • 140g Brazil nuts, roughly chopped
  • 50g desiccated coconut
  • 1 tablespoon butter, diced, plus a little butter for serving
  • 2 large, very ripe bananas – with a black peel is ideal (approx. 175g peeled weight)
  • 1 large egg, plus 1 large egg white
  • 5 tbsp milk
  • ½ tsp baking powder
  • ¼ tsp ground cinnamon

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Grease a 900g loaf tin and then line the base and ends with a long strip of baking paper.
  3. Mix 2 tablespoons each of sugar, flour, nuts and coconut.
  4. Add the butter and rub into sticky crumbs. Put aside.
  5. Mash the bananas well, then stir in the sunflower oil, egg and milk.
  6. In a separate large bowl, mix half the remaining sugar, then the remaining flour, nuts and coconut, then the baking powder and cinnamon.
  7. Beat the egg whites until stiff, add the last of the sugar and beat again until stiff and glossy.
  8. Stir the banana mixture into the dry ingredients, then lightly fold in the egg white mixture.
  9. Carefully scrape into the tin and sprinkle over the crumb mixture.
  10. Bake for 40 minutes, until a skewer inserted comes out clean. If the bread gets too brown, cover it with foil.
  11. Allow to cool in the tin, then remove and cut into thick slices, eat with butter if desired.
