  • 2 tbsp flour
  • 2 oxtails, joined together and cut into pieces
  • 4 tablespoons sunflower oil for frying
  • 2 onions, chopped
  • 3 carrots, cut into small pieces

  • 2 tbsp tomato paste
  • Bay leaves and thyme sprigs tied together
  • 1 bottle of full-bodied red wine
  • 300g self-raising flour

  • 75g butter
  • 3 egg whites
  • Olive oil for drizzling
