Ingredients

  • 1 duck breast, about 200 g
  • 2 slices smoked bacon, each cut into about 6 pieces
  • 1 medium waxy potato such as Desirée or Maris Piper, peeled and cut into about 8 pieces
  • ¼ savoy cabbage, roughly chopped (without stalk)
  • 150 ml chicken broth
  • large pinch of chopped parsley
  • small pinch of minced garlic (optional)

Preparation steps

  1. Heat a small saucepan (one with a lid) over medium heat.
  2. Season the breast, place it skin side down in the pan and reduce the heat to the lowest setting.
  3. Let sizzle, uncovered, for about 15 minutes, until the skin is golden brown and crispy and most of the fat has been released.
  4. Do not shake the pan or move the duck.
  5. Take out the duck (the meat side is raw).
  6. Pour off a little more than half of the fat (reserve for frying vegetables later) and increase the heat slightly.
  7. Add the bacon and fry for 2-3 minutes until crispy.
  8. Add the potato, cover, and cook for 10 minutes, stirring occasionally, until the potato looks sticky and is just starting to brown around the edges.
  9. Add the cabbage and stir until shiny.
  10. Pour in the broth.
  11. Place the duck, skin side up, between the cabbage and potatoes and cover the pan.
  12. Simmer gently for 10 minutes until the vegetables are soft and the duck is cooked through.
  13. Remove the duck from the pan and stir in the parsley and garlic.
  14. To serve, place vegetables, bacon and juice on a plate and place the duck on top.
