  • 1 large onion
  • 50g pork fat or lard
  • 750g white cabbage
  • 1 medium-sized apple (approx. 200 g)

  • 1 tsp caraway
  • 500 ml dry apple cider
  • 4 pork chops (each weighs about 200g)
  • 1 tbsp oil
  • 1 cube of chicken broth
  • Mashed potatoes to serve


White cabbage

We think it should be cooked al dente – about 4-6 minutes. Another option is to braise sliced ​​cabbage, covered, in butter and oil until “melted” (about half an hour). We start the process by sautéing an onion and adding cumin or crushed juniper berries.

Preparation steps

  1. Finely chop the onion and place it in a heavy-bottomed ovenproof dish along with the drippings. Sauté the onion over medium heat, stirring frequently, for about 5 minutes.
  2. Cut the stalk off the cabbage and chop the leaves finely. Add this to the bowl, mix everything together and cook over low heat while you peel and slice the apple.
  3. Crush the juniper and caraway seeds and add them to the pan along with the apple slices. Season and pour in the apple cider. Stir well and bring to a boil, cover the bowl and cook for 20 minutes.
  4. Preheat the oven to 160°C/140°C fan/gas. 4. Season the chops on both sides. Heat a heavy skillet with oil over medium-high heat and brown the chops on both sides.
  5. Remove the chops from the pan and place them in the baking dish on top of the cabbage. Add the bouillon cube and crumble it.
  6. Place the lid back on the baking dish and cook in the oven for another 30 minutes.
  7. If there is a lot of liquid in the dish, put it on the stove and let it simmer until it evaporates a little.
  8. Check the seasoning and serve with mashed potatoes.
