Ingredients

  • 3 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 celery sticks, finely chopped
  • 4 slices bacon, chopped
  • 1 tbsp tomato paste
  • 2 x 400g cans of chopped tomatoes
  • 2 tbsp dark brown sugar
  • 2 tsp Dijon mustard
  • 2 sprigs of thyme
  • 2 tsp Worcestershire sauce
  • 2 x 400g cans of cannellini beans, rinsed and drained
  • 2 red peppers, deseeded and chopped
  • 2 x 450g packs of herb sausages
  • a handful of parsley leaves, chopped, for serving (optional)

Preparation steps

  1. Heat 2 tablespoons oil in a large ovenproof casserole dish.
  2. Add onion, celery and bacon and cook until softened, 5-10 minutes.
  3. Increase the heat and add the tomato puree.
  4. Cook for 2 minutes, then add the chopped tomatoes, sugar, mustard, thyme, Worcestershire sauce and 200ml water.
  5. Bring the mixture to a boil.
  6. Cook uncovered over low heat for 15 minutes.
  7. Add the beans and peppers and simmer for another 15 minutes.
  8. Top up with a little boiling water if necessary.
  9. In the meantime, preheat the oven to 190°C/170°C fan/gas 5.
  10. Toss the sausages with the remaining 1 tablespoon of oil and spread on a baking sheet.
  11. Roast for 30 minutes until browned all over, turning occasionally.
  12. Place the sausages between the beans.
  13. Cover the pan and place it in the oven.
  14. Cook for another 30 minutes.
  15. Remove from the oven and sprinkle with parsley if necessary.
  16. Serve with the baked potatoes.
  17. Can be prepared up to 2 days in advance and reheated in a low oven or on the stovetop.
