- 3 tbsp vegetable oil
- 1 onion, finely chopped
- 2 celery sticks, finely chopped

- 2 tsp Dijon mustard
- 2 sprigs of thyme
- 2 tsp Worcestershire sauce
- 2 x 400g cans of cannellini beans, rinsed and drained
- 2 red peppers, deseeded and chopped
- 2 x 450g packs of herb sausages
- a handful of parsley leaves, chopped, for serving (optional)
- Heat 2 tablespoons oil in a large ovenproof casserole dish.
- Add onion, celery and bacon and cook until softened, 5-10 minutes.
- Increase the heat and add the tomato puree.
- Cook for 2 minutes, then add the chopped tomatoes, sugar, mustard, thyme, Worcestershire sauce and 200ml water.
- Bring the mixture to a boil.
- Cook uncovered over low heat for 15 minutes.
- Add the beans and peppers and simmer for another 15 minutes.
- Top up with a little boiling water if necessary.
- In the meantime, preheat the oven to 190°C/170°C fan/gas 5.
- Toss the sausages with the remaining 1 tablespoon of oil and spread on a baking sheet.
- Roast for 30 minutes until browned all over, turning occasionally.
- Place the sausages between the beans.
- Cover the pan and place it in the oven.
- Cook for another 30 minutes.
- Remove from the oven and sprinkle with parsley if necessary.
- Serve with the baked potatoes.
- Can be prepared up to 2 days in advance and reheated in a low oven or on the stovetop.
