  • 175g butter, softened
  • 200g light, soft brown sugar
  • 100g golden powdered sugar
  • 1 tbsp vanilla extract
  • 1 large egg
  • 250 g flour
  • ½ tsp baking soda
  • 200g blueberries
  • 50 g small salted pretzels, broken into coarse pieces
  • 100g white chocolate pieces

Preparation steps

  1. Preheat the oven to 190°C/170°C fan/gas 5.
  2. Line 2 baking trays with baking paper.
  3. Place butter, sugar and vanilla in a bowl.
  4. Beat with an electric whisk until pale and fluffy.
  5. Add the egg and beat again.
  6. Add flour, bicarbonate of soda and a pinch of salt to the bowl.
  7. Mix everything together with a spatula.
  8. Add blueberries, pretzel pieces and chocolate chips.
  9. Mix again until combined.
  10. Scoop golf ball-sized mounds of cookie dough onto the baking sheets.
  11. Make sure there is enough space between each cookie.
  12. (Each tray should hold 4-6 cookies, so you’ll need to bake in batches to make 20 cookies total.)
  13. Can be frozen at this point – just thaw in the fridge before baking.
  14. Bake for 18 minutes, changing the trays halfway through the baking time.
  15. Remove the trays from the oven and let cool for 10 minutes.
  16. Transfer the cookies to a wire rack.
  17. Bake the second batch.
  18. Continue until all cookies are baked.
  19. Stores in a cookie jar for up to 1 week.
