Ingredients

  • 250g pack of butter, plus some butter for greasing
  • 140g Demerara sugar
  • 85g golden syrup
  • 200g porridge
  • 140g macadamia nuts, roughly chopped
  • Zest of half a lemon
  • 85g self-rising flour
  • 200g blueberries
  • 85g white chocolate, finely chopped

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Grease the bottom of a 20cm square baking tin and line it with baking paper, leaving a slight overhang – this will make it easier to remove the flatbreads.
  3. Place butter, sugar, golden syrup and a pinch of salt in a pan and melt gently over low heat.
  4. Mix the oats, nuts, lemon zest and flour in a large bowl.
  5. Pour the melted sugary butter over the oat mixture and mix well.

  7. Pour the oat mixture into the lined pan and press it into an even layer using the back of a metal spoon.
  8. Bake for 40-45 minutes until golden brown.
  9. Allow the flapjacks to cool completely in the pan.
  10. Lift the cooled flapjack onto a board.
  11. Place the white chocolate in a small bowl and melt in 15-second bursts in the microwave or over a saucepan of barely simmering water.
  12. Drizzle the melted chocolate back and forth over the flatbread.
  13. Allow to cool until firm before cutting into squares.
