Ingredients
- piece of butter
- 2 tbsp powdered sugar
- 50 g pecans or walnuts
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 heads chicory
- 100g bag of rocket
- 50g grapes (we used muscat grapes)
- 140 g blue cheese (preferably Roquefort)
Preparation steps
- First caramelize the nuts. Heat the butter and sugar in a small pan, then stir in the nuts.
- Cook over low heat until the nuts are crisp and coated in the sugary butter, about 5 minutes.
- Place the nuts on an oiled baking tray, allow to cool slightly and then chop roughly.
- Mix vinegar and olive oil well.
- Season with a little salt and pepper.
- To serve, pluck the leaves from the chicory and place them in a bowl with the arugula.
- Halve the grapes, remove the seeds and then add them to the bowl with most of the dressing.
- Toss gently until the leaves are coated, then arrange on 4 serving plates.
- Crumble the cheese over it and sprinkle with some nuts.
- Drizzle with remaining dressing to serve.
