  • 200 g butter, soft
  • 200g golden powdered sugar
  • 200g self-raising flour
  • 50g ground almonds
  • 2 eggs and 2 egg yolks, beaten
  • 2-4 tbsp milk
  • 150g blackberry basket

  • 100g golden icing sugar, plus a pinch
  • 2 tbsp almond flakes
  • 200 ml cream, lightly whipped
  • 4 tbsp blackberry jelly

  1. Line the bottom of two 20cm loose-bottomed non-stick sandwich tins with baking paper.
  2. Preheat the oven to 160°C/fan 140°C/gas 3.
  3. Put all the cake ingredients (except the blackberries and only half of the milk) in a bowl.
  4. Beat the ingredients until creamy and mix well.
  5. Stir in 100 g blackberries and, if necessary, a little additional milk to loosen the mixture a little.
  6. Divide the mixture between the sandwich pans and smooth the bottoms.
  7. Quickly whisk the egg whites in a clean bowl.
  8. Add the 100 g sugar to the egg whites, spoonful by spoonful, until they are really thick and shiny.
  9. Spread the meringue lightly on one of the cakes.
  10. Sprinkle the flaked almonds and an additional pinch of sugar over the meringue.
  11. Bake both cakes for 40 minutes.
  12. Remove the cake from the oven without the meringue and set aside.
  13. Bake the remaining cake for another 30 minutes, until a skewer inserted into the cake comes out clean.
  14. Carefully remove the cakes from the tins and let them cool on a wire rack.
  15. When the cakes are cold, remove the baking paper.
  16. To serve, spread the cream onto the cake base right up to the edge.
  17. Pour the blackberry jelly on top.
  18. Place the meringue-covered cake on top of the cream and blackberry jelly.
  19. Decorate the cake with the remaining blackberries.
