Black Forest ice cream sundae with brownies

  • 568 ml pot of cream
  • 140g powdered sugar
  • 4 egg yolks
  • ½ tsp vanilla extract
  • 200 g dark chocolate (70% cocoa), plus some chocolate to decorate
  • 1?2 400g canned cherries
  • 2 tbsp kirsch or brandy
  • 148 ml double cream
  • 2 tsp powdered sugar
  • 2 brownie squares
  • 200g butter
  • 175g dark brown sugar
  • 140g granulated sugar
  • 4 eggs
  • 50g ground almonds
  • 50g plain flour
  • 200g dark chocolate

Preparation steps

  1. For the ice cream, put the cream in a pot and bring to the boil.
  2. Mix sugar, egg yolks and vanilla.
  3. Pour 2 tablespoons of cream over it and stir into the egg mixture.
  4. Pour the egg mixture into the pan with the cream, reduce the heat, then cook for a few minutes, stirring constantly with a wooden spoon, until the custard coats the back of the spoon.
  5. Melt the chocolate in the microwave on high for 1 minute and then stir it into the bowl with the custard.
  6. When the cream has cooled, transfer it to an ice cream maker according to the manufacturer’s instructions.
  7. To make the sauce, drain the cherries, reserving the liquid and setting aside.
  8. Place the kirsch or brandy liquid in a saucepan and simmer for 5 minutes until syrupy.
  9. Return the cherries to the pan to heat.
  10. To assemble the sundaes, beat the cream with the powdered sugar until soft peaks form.
  11. Cut the brownies into bite-sized pieces, then place a handful in the bottom of 4 glasses.
  12. Place the ice cream on top and drizzle with the cherries and sauce.
  13. Top with whipped cream and sprinkle with grated chocolate.
  14. To make the brownies, preheat the oven to 180°C/fan 160°C/gas mark 4, then grease and line a 20cm square brownie tin.
  15. Heat butter and dark chocolate in a pan until melted.
  16. Stir in dark brown sugar and granulated sugar.
  17. Allow to cool for 5 minutes, then mix with the eggs.
  18. Stir in the almonds and flour.
  19. Pour into the tin and then bake for 30-35 minutes until just cooked through. (Makes 16)
