  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Heat the oil in an ovenproof frying pan and fry the onions over medium heat until golden brown, about 10 minutes.
  3. Add the garlic and curry powder to the onion and sauté for 1-2 minutes.
  4. Add the grated potatoes to the pan and cook, stirring occasionally, for 5-8 minutes.
  5. Allow the potatoes to soften and turn golden brown in spots.
  6. Season the eggs and add them to the pan with the peas and most of the coriander.
  7. Stir egg mixture to coat potato mixture.
  8. Cook for another 1 minute.
  9. Place the pan in the oven and bake for 10 minutes, until the eggs are set.
  10. Sprinkle the frittata with the remaining coriander.
  11. Serve the bhaji frittata with mango chutney, natural yogurt and naan bread if desired.
