- 3 egg whites
- 1 tsp powdered instant coffee
- 175g golden powdered sugar
- 50 g roasted chopped hazelnuts
- 2 x 284ml boxes of double cream
- 500g bag of frozen mixed berries
- 142 ml carton of double cream
- 1 tbsp golden syrup
- 140 g dark chocolate (70% cocoa), broken into pieces
- 25g butter
- Preheat the oven to 90°C fan/110°C fan/gas 1/4 and cover a baking tray with baking paper.
- Place the egg whites in a large bowl, sprinkle in the coffee powder and stir until the egg whites are stiff.
- Add half of the icing sugar and mix well, then add the remaining sugar and the chopped hazelnuts and mix until a stiff mixture forms.
- Spread the meringue mixture about 2cm high on the baking paper (any shape will do as you will want to divide it later).
- Bake for 3 hours until the mixture is crispy. Remove and let cool.
- Cut a 28 cm circle out of baking paper and make 10 cm wide incisions all around towards the middle. Use this to line the bottom and sides of a 20cm loose-bottomed round cake tin.
- Pour the cream from both cartons into a bowl and whip until it just holds its shape.
- Use your hands to break the meringue into small pieces.
- Set aside about a third of the meringue for the cake base and mix the rest into the cream.
- Spread about a third of the cream mixture on the bottom of the mold and cover with half of the frozen berries.
- Repeat these layers again, then top with the remaining cream mixture and top with the reserved meringue.
- Cover the cake with plastic wrap and press it evenly using a small plate that fits into the pan.
- Wrap in foil, label and freeze for up to a month.
- Make the sauce. Place the cream and golden syrup in a small saucepan with 3 tablespoons of water.
- Heat until gently bubbling, then turn the heat to low and add the chocolate and butter.
- Heat gently, stirring occasionally, until the chocolate melts and the mixture becomes smooth and glossy.
- Pour into a freezer container, allow to cool, seal, label and freeze for up to a month.
- On this day, move the cake and chocolate sauce from the freezer to the refrigerator 8 hours before you plan to serve.
- After 2-3 hours, take out the cake. Unwrap and carefully balance the cake pan on a jam jar or tin. Then press down on the sides of the mold to release it.
- Peel off the baking paper from the sides.
- Now lift the cake from the bottom of the pan, remove the parchment underneath (a wide spatula or fish slice helps here) and place the cake on a serving plate.
- Place in the fridge for 5 hours before serving with the chocolate sauce.
- To warm the chocolate sauce, pour it into a heatproof bowl over a pan with a little hot water at the bottom and heat gently, stirring occasionally, until warm, smooth and glossy.
