Ingredients

  • 4 ounces currant jelly
  • 500g raspberries
  • 6 sprigs of mint
  • 100g plain flour
  • 85g ground almonds
  • 85g golden powdered sugar
  • 85g cold, unsalted butter, cut into small pieces
  • 2 medium egg yolks
  • a few drops of almond extract
  • 15g butter, melted, for greasing
  • 225g white chocolate
  • 175 ml double cream

Preparation steps

  1. Mix flour, ground almonds, sugar and salt in a food processor for 5 seconds.
  2. Add butter and pulse until mixture forms fine crumbs.
  3. Place the mixture in a bowl and add egg yolks and almond extract.
  4. Mix with a knife until coarse crumbs form.
  5. Knead the mixture briefly with your hands into a smooth, supple ball.
  6. Wrap the dough in cling film and chill for at least 30 minutes.
  7. Brush tart tins with melted butter.
  8. Halve the dough and roll out a piece on non-stick baking paper to a thickness of 3 mm.
  9. Using a cookie cutter or an upside-down saucer as a template, cut out three 5-inch circles.
  10. Place dough circles in tartlet molds and press on the bottom and edges.
  11. Prick the bases with a fork and chill for at least 15 minutes.
  12. Preheat the oven to fan 180 °C/fan 200 °C/gas 6.
  13. Line the tartlets with buttered foil and press them on the sides.
  14. Bake for 7-8 minutes, then remove the foil and bake for another 3-4 minutes until golden brown.
  15. Allow the tarts to cool in the tins, then remove and put them back into the tins.
  16. Place chocolate in a bowl and heat cream until it boils.
  17. Pour the cream over the chocolate and leave for 2-3 minutes, then stir until smooth.
  18. Chill the ganache for 8-12 minutes, until cool but still soft enough to pour.
  19. Pour a thin layer of ganache into each tart to cover the bottom.
  20. Chill until set, then remove the tarts from the tin and let them come to room temperature for at least 30 minutes.
  21. Warm the currant jelly with water and stir until smooth.
  22. Add raspberries to the ganache.
  23. Pour the warm glaze over the raspberries and decorate each tart with a sprig of mint.
