Ingredients

  • Cut 400 g shortcrust pastry from a 500 g block
  • 100g freshly thawed frozen raspberries
  • 25g almond flakes
  • 75g self-raising flour, plus a little more for dusting
  • 75g ground almonds
  • 150 g Total Sweet (xylitol)
  • 150 g soft butter
  • 1 teaspoon Baking powder
  • ½ tsp almond extract
  • 3 large eggs

Preparation steps

  1. Roll out the dough thinly on a lightly floured surface.
  2. Line the bottom and sides of a 10-inch loose-bottomed nonstick tart pan with the dough.
  3. Leave a small dough overhang, but trim off any noticeable excess.
  4. Prick the base with a fork and chill for 20 minutes.
  5. Preheat the oven to 200°C/180°C fan/gas mark 6 and place a baking tray in to heat up.
  6. Line the dough base with baking paper.
  7. Fill the box with baking beans and cook on the hot tray for 10 minutes.
  8. The blast of heat from the baking sheet prevents the bottom from becoming soggy.
  9. Carefully lift off the paper with the beans and bake for another 3 minutes to cook the pastry base.
  10. Turn the oven down to 180°C/160°C fan/gas 4.
  11. For the frangipane, place all the ingredients in a large bowl.
  12. Beat with an electric whisk until well combined or puree in a food processor.
  13. Scatter the raspberries into the dough base.
  14. Pour the almond mixture over the raspberries and smooth the top with a knife.
  15. Scatter the flaked almonds on top.
  16. Bake for 30-40 minutes until golden brown and firm.
  17. Carefully trim any excess dough from the edge of the cake with a sharp knife.
