  • 1 small chicken, about 1½ kg
  • 5 tablespoons olive oil, plus some for rubbing

  • 100 ml white wine

Peel 3 large beets and cut into large cubes or pieces. Cook in boiling water for 4-5 minutes, then drain. Shortly before serving, heat 1 tablespoon of butter with 1 tablespoon of powdered sugar and 1 teaspoon of honey until sizzling. Toss the beets until warmed through and glazed, 1 minute. Serves 4 as a side dish.

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Rub the chicken all over with oil and season with salt and pepper.
  3. Place the chicken in a roasting pan and roast for 1 hour.

  5. Return the chicken to the oven for another 30 minutes until cooked through and the garlic is soft.

  12. Cook the beets in salted water for 6 minutes until slightly crispy.
  13. Toss the beets in the garlic dressing with parsley and capers and season to taste.
  14. Fold the chicken together and sprinkle with watercress.
  15. Serve the chicken with the herb beets on the side.
