Ingredients

  • a large handful of fresh oregano or marjoram leaves
  • 1 clove of garlic
  • Juice of 1½ lemons
  • 4 tbsp extra virgin olive oil
  • 250 g bunch of asparagus, cut into 3 cm long pieces
  • 2 x 250g packs of cooked fresh beetroot, quartered
  • Zest of 1 lemon
  • 2 spring onions, finely chopped
  • 85g bag of watercress, large stems removed
  • 10 green and 10 purple basil leaves (or 20 of one color)
  • 400g feta or goat cheese

Preparation steps

  1. The day before: Prepare the dressing.
  2. Place the oregano or marjoram, a pinch of salt and the garlic in a food processor and process into a paste.
  3. Add the lemon juice and stir until smooth.
  4. Stir in the olive oil and season – it should be spicy and slightly salty.
  5. Cover and chill.
  6. Two hours before serving: Bring a pot of salted water to the boil, add the asparagus and cook for 3 minutes.
  7. Drain and let cool under cold tap.
  8. Cover and keep cool.
  9. Place the beets in a large bowl and toss with two-thirds of the dressing.
  10. Add lemon zest and scallions, cover and store at cool room temperature with remaining dressing.
  11. To serve: Add the watercress to the beetroot and stir in the basil.
  12. Add the asparagus and season with freshly ground black pepper.
  13. Taste before adding salt as the cheese is quite salty.
  14. Mix lightly so everything doesn’t turn pink, then pour into a serving bowl.
  15. Crumble the cheese over the top and pour the remaining dressing over it.
