Ingredients

  • 175g wholemeal flour
  • 100g porridge
  • 100g butter
  • 100g grated carrots
  • 3 large onions, sliced
  • 3 medium sized beets, peeled and grated
  • 3 medium eggs
  • 250 ml milk (either cow, goat or oat milk)

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Pulse the flour, oats and butter in a food processor until you have a crumb-like mixture.
  3. Add the grated carrot to the food processor and process until the mixture forms a ball. Alternatively, rub the butter into the dry ingredients, add the carrots and press together to form a ball.
  4. Gently roll out the dough and line a 25cm metal pizza tin or flat tart tin. Cool.
  5. Gently fry the onions in oil for about 15-20 minutes until they begin to caramelize.
  6. Place the beets in the baking pan and cover with the caramelized onions.
  7. In a separate bowl, whisk together eggs and milk. Season with salt and pepper.
  8. Pour the egg and milk mixture over the onions and beets in the batter.
  9. Bake in the preheated oven and after 15 minutes reduce the temperature to 160°C/140°C fan/gas mark 3.
  10. Bake for a further 40 minutes or until the tart is set and golden brown.
