- 175g wholemeal flour
- 100g porridge
- 100g butter
- 100g grated carrots
- 3 large onions, sliced
- 3 medium sized beets, peeled and grated
- 3 medium eggs
- 250 ml milk (either cow, goat or oat milk)
- Preheat the oven to 180°C/160°C fan/gas 4.
- Pulse the flour, oats and butter in a food processor until you have a crumb-like mixture.
- Add the grated carrot to the food processor and process until the mixture forms a ball. Alternatively, rub the butter into the dry ingredients, add the carrots and press together to form a ball.
- Gently roll out the dough and line a 25cm metal pizza tin or flat tart tin. Cool.
- Gently fry the onions in oil for about 15-20 minutes until they begin to caramelize.
- Place the beets in the baking pan and cover with the caramelized onions.
- In a separate bowl, whisk together eggs and milk. Season with salt and pepper.
- Pour the egg and milk mixture over the onions and beets in the batter.
- Bake in the preheated oven and after 15 minutes reduce the temperature to 160°C/140°C fan/gas mark 3.
- Bake for a further 40 minutes or until the tart is set and golden brown.
