  • 2 x 20g packs of fresh basil leaves
  • 6 tbsp olive oil
  • 250 ml jar of mayonnaise
  • Juice of 1 lime
  • 32 large fresh raw shrimp, heads and shells removed
  • 24 small fresh bay leaves
  • 6 tbsp olive oil

Preparation steps

  1. If using wooden or bamboo skewers, soak eight of them in cold water for about half an hour.
  2. To make the basil mayonnaise, dip the leaves in a small pot of boiling water for about 1 minute, then remove with a slotted spoon and place in a bowl of cold water. (This creates a smooth paste.)
  3. Drain excess water from the leaves, squeeze and place in a food processor with 2 tablespoons olive oil.
  4. Stir for 1-2 minutes until a fine paste forms.
  5. Add all the mayonnaise and a squeeze of lime juice.
  6. Stir everything until smooth, pour into a bowl and chill.
  7. Place 4 shrimps and 3 bay leaves on each skewer.
  8. Brush everything with the remaining oil.
