Banana Pecan Fudge Loaf

  • 2 ripe bananas, mashed, about 200g peeled weight
  • 2 medium eggs, beaten
  • 100g butter, melted
  • 100 g toffee yoghurt
  • 100g light muscovado sugar
  • 200g self-raising flour
  • ½ tsp baking powder
  • 100 g pecans, coarsely chopped
  • 150g pack of Werthers chewy sweets, coarsely chopped

Preparation steps

  1. Preheat the oven to 160°C/fan 140°C/gas 3.
  2. Butter and line the bottom of a 900g loaf tin.
  3. Mix bananas, eggs, butter, toffee yogurt and sugar until well combined.
  4. Sift the flour and baking powder together and fold into the mixture.
  5. Fold in three quarters of the pecans and half of the toffees.
  6. Pour the mixture into the mold and smooth the lid.
  7. Sprinkle the remaining nuts and toffee on top.
  8. Bake for 50-55 minutes until the loaf has risen and feels springy.
  9. Allow to cool in the tin, then remove and peel off the lining.
  10. Stored in an airtight container for up to 3-4 days.
