  • 225 g strong white flour
  • 225g malted grain bread flour
  • 1 tsp salt
  • 1 tsp powdered sugar
  • 7g sachet of yeast for easy mixing
  • 150 ml warm milk
  • 1 egg, beaten
  • 1 tbsp olive oil
  • 100-150ml warm water
  • 50g unsalted butter, melted
  • 4 medium bananas
  • 200 g dried apricots, chopped
  • 2 tsp cinnamon
  • 100g light muscovado sugar
  • Zest of 1 orange
  • 4 tbsp liquid honey

Preparation steps

  1. Mix flour and salt in a large bowl, then stir in sugar and yeast.
  2. Make a well in the center of the flour and pour in the warm milk, beaten egg, olive oil and enough water to make a soft, moist dough.
  3. Knead the dough on a lightly floured surface for 10 minutes until smooth.
  4. Place the dough in a lightly oiled bowl, cover with oiled cling film and let rise in a warm place until it has doubled in size.
  5. Lightly butter a square baking pan (20 cm).
  6. Roll out the dough on a floured work surface into a rectangle measuring approx. 30 x 25 cm and brush with melted butter.
  7. Cut the bananas into thin slices, put them in a bowl and mix in the apricots, sugar, cinnamon and orange peel.
  8. Pour the mixture over the dough, leaving a finger-width edge.
  9. Roll the dough toward you from the long side of the rectangle, tucking in the banana that falls out. Pinch the ends together to seal.
  10. Using a sharp knife, cut into 9 pieces and place in the mold, cut side up, so that they just touch each other.
  11. Cover loosely with oiled cling film and let rise in a warm place for 30 minutes.
  12. Preheat oven to 200°C/fan 180°C/gas 6.
  13. Heat the honey in a pan or in the microwave on high for 5 seconds, then brush on half of the rolls.
  14. Bake until golden brown, 20-25 minutes.
  15. Allow to cool in the tin for 10 minutes before transferring to a cooling rack.
  16. Brush with the remaining honey.
  17. Pull apart to serve.
