  • 175g softened butter, plus some butter for greasing
  • 175g golden powdered sugar
  • 3 eggs
  • 140g self-raising flour
  • 85g ground almonds
  • ½ tsp baking powder
  • 100 ml milk
  • 2 small, very ripe bananas
  • 50g pecans, chopped, plus extra
  • 85g soft butter
  • 100g powdered sugar, sifted
  • 1 tsp vanilla extract

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3.
  2. Grease a 900 g loaf tin and line it with a long strip of baking paper.
  3. In a mixing bowl, beat butter and sugar with an electric whisk until fluffy.
  4. Add the bananas in a few pieces and mix them with eggs, flour, almonds, baking powder and milk until smooth. The whisk mash the bananas.
  5. Stir in the pecans and then scrape the dough into the prepared loaf pan.
  6. Bake the loaf for 45-50 minutes or until golden brown and risen and a skewer inserted into the center comes out clean.

  8. In a separate bowl, beat butter, powdered sugar and vanilla until creamy.
  9. Spread the buttercream on the cooled cake.
