Ingredients
- 2 tbsp balsamic vinegar
- 4 skinless and boneless chicken breast fillets (approx. 500 g total weight)
- 2 ripe peaches
- 100g baby spinach leaves
- a handful of basil leaves
Preparation steps
1. Preheat the grill to medium and line the rack with foil.
2. Measure 1 tablespoon of vinegar in a shallow bowl with 1 tablespoon of olive oil and a good pinch of salt and pepper.
3. Put the chicken fillets in the dish and toss them in the dressing until they are well coated.
4. Place the chicken in a single layer on the foil-lined rack and grill for 10-12 minutes.
5. Flip the chicken over and grill for another 10-12 minutes, until the chicken is cooked through, shiny and deep brown.
6. Halve the peaches, remove the stones and cut them into fairly thick slices.
7. Spread the spinach leaves on a serving platter.
8. Slice the cooked chicken and sprinkle over the spinach leaves.
9. Add the sliced peaches and half of the basil leaves to the plate.
10. Chop up the remaining basil leaves and mix in a small bowl with the remaining balsamic vinegar, 2 tablespoons olive oil, salt and pepper.
11. Drizzle the basil mixture over the salad.
