Balsamic beetroot and shallots

  • 500 g small, raw beetroot, scrubbed and quartered
  • 1 tbsp olive oil
  • 300g shallots, large shallots halved
  • 1 tablespoon thyme leaf, plus extra for serving
  • 2 tbsp balsamic vinegar

Preparation steps

  1. Preheat the oven to 190°C/170°C fan/gas 5.
