Baking dish with sausage and lentils

Ingredients

  • 3 small onions
  • 6 good quality sausages (we used Toulouse)
  • 2 x 250g bags of cooked Puy lentils
  • 3 tbsp red wine vinegar
  • 3 tbsp maple syrup

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Quarter the onions, leaving the root intact so they don’t fall apart during cooking.
  3. Heat a grill pan to high heat.
  4. Grill the onions to char them, then remove and set aside.
  5. Repeat the process with the sausages – you don’t need to cook them through at this point, just brown them.
  6. Put the lentils in a roasting pan, add the juices from the grill pan, the vinegar and some spices and mix everything together.
  7. Arrange onion wedges and sausages on top.
  8. Brush sausages and onions with maple syrup and season the onions.
  9. Let cook for 20 minutes, then serve.
