- 3 small onions
- 6 good quality sausages (we used Toulouse)
- 2 x 250g bags of cooked Puy lentils
- 3 tbsp red wine vinegar
- 3 tbsp maple syrup
- Preheat oven to 200°C/180°C fan/gas 6.
- Quarter the onions, leaving the root intact so they don’t fall apart during cooking.
- Heat a grill pan to high heat.
- Grill the onions to char them, then remove and set aside.
- Repeat the process with the sausages – you don’t need to cook them through at this point, just brown them.
- Put the lentils in a roasting pan, add the juices from the grill pan, the vinegar and some spices and mix everything together.
- Arrange onion wedges and sausages on top.
- Brush sausages and onions with maple syrup and season the onions.
- Let cook for 20 minutes, then serve.
