  • 50 g butter, soft
  • 2 kg Maris Piper potatoes, peeled
  • 1½ l boiling water
  • 1 heaped tablespoon of Marigold Swiss vegetable stock powder

Come forward
The potatoes can be prepared 2 hours in advance until ready to go in the oven. Brush well with broth and butter to prevent them from discoloring.

Preparation steps

  1. Brush the baking sheet generously with butter.
  2. Using the fine blade of a food processor or a sharp knife, slice the potatoes, separating any slices that are stuck together.
  3. Pour the boiling water into a large pot and whisk in the bouillon powder.
  4. Add the potatoes, cover, bring to the boil and cook for 2 minutes.
  5. Using a fish slice, transfer the potatoes to the baking tray and add some of the broth to each portion.
  6. Spread the potatoes evenly on the baking sheet. Don’t try to stack the layers neatly on top of each other like you would with a gratin—this is a fluffy, bakery-style dish.
  7. Discard any remaining broth or use it as a soup base.
  8. Season potatoes.
  9. Place the tray in the oven for the last 30 minutes of the pork cooking time (or cook separately in a preheated oven at 170°C/Gas 4/fan for 30 minutes).
  10. After 30 minutes, increase the heat to 220°C/gas 7/fan 200°C and cook for a further 25-35 minutes.
  11. Cut the potatoes into 8 portions and serve straight from the tray, lifting them out along with a slice of fish.
  12. They won’t look neat, but they will taste divine.
