Ingredients

  • 115g unsalted butter, chopped
  • 600g strong white bread flour
  • 7 g fast-acting dry yeast, plus another ½ tsp
  • 2 tsp golden powdered sugar
  • A splash of olive oil or rapeseed oil for greasing
  • 2 tbsp fine polenta or corn flour
  • 3 x 250g boxes of Camembert
  • 1 egg, beaten
  • 3 tbsp poppy seeds
  • 3 tbsp sesame seeds
  • Topping for the cheese (optional) – use woody herbs like rosemary and thyme

Preparation steps

  1. Heat 350 ml water in a saucepan until steaming
  2. Remove from heat
  3. Add the butter and allow to cool until you can comfortably insert your finger into the liquid
  4. Combine flour, yeast, sugar, and 1 teaspoon salt in a large bowl or the bowl of a stand mixer
  5. Add the cooled liquid and mix to form a soft dough
  6. Knead by hand for 10 minutes or in a mixer for 5 minutes, until the dough feels stretchy and smooth
  7. Return to a clean, oiled bowl and cover with oiled plastic wrap
  8. Let rise in a warm place for 1 1/2-2 hours or until doubled in size
  9. Grease your largest baking tray (ours was 42 x 33cm) and line it with baking paper
  10. Also grease the baking paper and then sprinkle it over the polenta
  11. Remove the cheeses from the boxes and place them well apart on the tray
  12. Brush each one with a little oil
  13. Cut the tops a few times with a sharp knife
  14. Add a few fresh herbs if desired
  15. Pour the egg into a shallow bowl
  16. Place the poppy seeds in another bowl
  17. Place the sesame seeds in a third bowl
  18. Knock the air out of the dough and knead again for a few minutes
  19. Take a small piece of dough (about the size of a whole walnut) and roll it into a ball
  20. Dip the top into the egg and then into one of the seed shells
  21. Place the ball on the baking sheet, core side up
  22. Continue rolling and dipping the dough, leaving every third piece seedless
  23. Fill the tray, but leave some space between each dough ball
  24. Reposition the dough balls as necessary to ensure the baking sheet is evenly covered
  25. Preheat the oven to 180°C/160°C fan/gas 4
  26. Cover the tray with a few sheets of oiled plastic wrap and let rest until the dough has doubled in size and the balls are touching, 30 minutes to 1 hour
  27. Bake for 25-30 minutes until the dough balls are baked through and the cheese is mushy and melted
  28. Let cool for 5 minutes, then serve
