Ingredients

  • 320g sweet shortcrust pastry sheet
  • Flour for dusting
  • 350 ml double cream, plus 200 ml as a topping
  • 1 vanilla bean, split lengthways
  • 2 whole eggs, plus 4 yolks
  • 125 g powdered sugar, plus 1 ½ tbsp for sprinkling
  • 200 ml Baileys, plus 1 tbsp for garnish
  • Honeycomb, crumbled (optional)

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas mark 4 and place a baking tray on the middle rack to heat up.
  2. Roll out the dough and use it to fill a 22cm diameter fluted tart tin.
  3. Leave about 1 cm of dough overhanging and cut off the rest.
  4. Line the cake base with baking paper, first crumple it up to make it more supple, and then fill it with the baking beans.
  5. Place the tart base on the hot baking tray and bake for 15 minutes.
  6. Remove the beans and parchment from the tart pan and place in the oven for another 5 minutes until it turns a biscuit brown color.
  7. Trim the sides of the pastry shell with a serrated knife and discard the scraps.
  8. Pour the cream into a saucepan and scrape out the pulp from the vanilla pod.
  9. Add the vanilla seeds and pod to the cream and heat until steaming.
  10. In a separate large bowl, whisk together the whole eggs, egg yolks and sugar until smooth.
  11. Pour the Baileys into the cream, then add the cream mixture to the eggs and mix well.
  12. Strain the mixture through a sieve into a jug.
  13. Pour the custard into the tart pan that is still on the baking sheet.
  14. Reduce the oven temperature to 150°C/130°C Fan/Gas 2 and bake for 30 minutes, until the filling is just set and wobbles slightly in the centre.
  15. Allow the tart to cool to room temperature and then let it rest in the refrigerator for at least 2 hours.
  16. Whip the remaining cream, sugar and Baileys until the mixture holds its shape.
  17. Pour the whipped cream into the center of the cake, leaving a border of exposed custard around the edges.
  18. If desired, spread crumbled honeycomb over the tart.
  19. Serve the tart immediately.
