- 3 large eggs
- 130g can of tuna in olive oil, oil reserved
- 1 large flute or baguette measuring approx. 54 cm
- 2 tbsp mayonnaise
- 3 tomatoes, ends trimmed, cut into thick slices
- 12-24 basil leaves (depending on how spicy you like it)
- 12 pitted Kalamata olives
- 8 anchovy fillets
- 1 shallot, finely chopped
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- ½ tsp Dijon mustard
- Bring a small pot of water to the boil.
- Add the eggs and cook for 10 minutes. Drain and then hold the eggs under the cold tap so that they cool quickly. Carefully peel the eggs and cut them into wedge-shaped quarters.
- In the meantime, mix all the ingredients for the shallot vinaigrette with spices and stir in the tuna oil.
- Cut the loaf in half lengthwise, but not all the way through, so that it opens like a book. With the bread easily detached from the top half, pull it out with your fingers to hollow out the loaf slightly.
- Drizzle the vinaigrette onto the bottom half of the loaf. Stir the mayonnaise into the tuna and spread on top. Now layer in the tomatoes, basil, olives, eggs and anchovies.
- Roll up tightly in baking paper and secure lengthwise with rubber bands or strings. Press the loaf down very well and then refrigerate overnight. Slice if feeding a crowd, or into 4 lengths.

Health benefits of baguette stuffed with Niçoise
In addition to being a delicious and filling meal, the Niçoise-filled baguette also offers numerous health benefits. Packed with healthy ingredients, this recipe provides a balance of essential nutrients including protein, carbohydrates, vitamins and minerals. Let’s explore the health benefits of each ingredient:
Eggs are a rich source of high-quality protein and provide all essential amino acids. They also contain important vitamins such as B12, riboflavin and selenium. Additionally, eggs are known for their ability to promote brain health, support eye health, and maintain muscle mass.
Tuna is an excellent source of lean protein and omega-3 fatty acids. Omega-3 fatty acids are known for their anti-inflammatory properties, which can reduce the risk of heart disease and improve brain health. Tuna is also rich in essential vitamins and minerals, including vitamin D, vitamin B12 and selenium.
Although mayonnaise should be consumed in moderation due to its high fat content, it may still provide some health benefits. Mayonnaise is a source of healthy fats, such as monounsaturated fats from olive oil. These fats, when consumed in moderation, can help improve heart health and reduce inflammation.
Tomatoes are rich in antioxidants, especially lycopene, which gives them their bright red color. Lycopene has been linked to various health benefits, including reducing the risk of heart disease and certain types of cancer. Tomatoes are also a good source of vitamins A, C and K as well as potassium and folic acid.
Basil not only adds flavor to the Niçoise-filled baguette, but also offers its own health benefits. It contains essential oils such as eugenol and linalool, which have antioxidant and anti-inflammatory properties. Basil is also a good source of vitamins A, K and C, as well as minerals such as calcium and iron.
Kalamata olives are a rich source of monounsaturated fats, which help maintain healthy cholesterol levels and may reduce the risk of heart disease. They also contain powerful antioxidants that can protect against oxidative stress and inflammation. In addition, Kalamata olives provide minerals such as calcium, iron and potassium.
Anchovies are a good source of omega-3 fatty acids, which have been shown to support heart health, reduce inflammation, and improve brain function. They are also rich in protein, vitamins (such as vitamin D and vitamin B12) and minerals such as calcium and iron, making them a nutrient-dense addition to the Niçoise-filled baguette.
Shallots are part of the onion family and offer similar health benefits. They contain antioxidants and sulfur compounds that may have a protective effect against chronic diseases. Shallots are also a good source of fiber, vitamin C and potassium.
Olive oil, especially extra virgin, is a healthy source of monounsaturated fats and polyphenols. These compounds have been linked to a reduced risk of heart disease, improved cholesterol levels and lower blood pressure. The olive oil used in this recipe also helps keep the Niçoise-filled baguette moist and flavorful.
White wine vinegar
White wine vinegar adds acidity to the dressing for the Niçoise-filled baguette. While it provides a spicy taste, it also provides a small amount of probiotics and can help improve digestion.
Dijon mustard gives the dressing a special flavor and provides important nutrients. Mustard seeds are rich in antioxidants and minerals such as potassium, magnesium and phosphorus. Plus, it’s low in calories and can be a healthier alternative to high-fat condiments.
This Niçoise-filled baguette recipe offers a delicious combination of flavors and textures while providing various health benefits. Incorporating these ingredients into your diet can contribute to a balanced and nutritious eating plan.
