Baguette filled with Niçoise

  • 3 large eggs
  • 130g can of tuna in olive oil, oil reserved
  • 1 large flute or baguette measuring approx. 54 cm
  • 2 tbsp mayonnaise
  • 3 tomatoes, ends trimmed, cut into thick slices
  • 12-24 basil leaves (depending on how spicy you like it)
  • 12 pitted Kalamata olives
  • 8 anchovy fillets
  • 1 shallot, finely chopped
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • ½ tsp Dijon mustard

Preparation steps

  1. Bring a small pot of water to the boil.
  2. Add the eggs and cook for 10 minutes. Drain and then hold the eggs under the cold tap so that they cool quickly. Carefully peel the eggs and cut them into wedge-shaped quarters.
  3. In the meantime, mix all the ingredients for the shallot vinaigrette with spices and stir in the tuna oil.
  4. Cut the loaf in half lengthwise, but not all the way through, so that it opens like a book. With the bread easily detached from the top half, pull it out with your fingers to hollow out the loaf slightly.
  5. Drizzle the vinaigrette onto the bottom half of the loaf. Stir the mayonnaise into the tuna and spread on top. Now layer in the tomatoes, basil, olives, eggs and anchovies.
  6. Roll up tightly in baking paper and secure lengthwise with rubber bands or strings. Press the loaf down very well and then refrigerate overnight. Slice if feeding a crowd, or into 4 lengths.
